Did you
know that every country makes the good old omelette in a different way?
What we will learn today is the Spanish way of making an omelette. It is
delicious, tasty, easy and a break from our regular way of making an
omelette.
Ingredients for 2 servings:
- 2 big potatoes
- 1 small onion
- 1 garlic cloves
- 2 tbsp oil
- 2 eggs
- A few coriander leaves
Step 1:
Wash the potatoes and slice into evenly sized rounds.
Step 2:
Peel and dice the onions and garlic. Heat 1 tbsp frying oil in
a large frying pan with lid. Fry the potatoes while turning regularly
for 6-8 minutes, until golden brown. Season with salt and pepper. Add
the onions and garlic and fry briefly. Allow the potatoes to cool down
for 10 min.
Step 3:
Whisk the eggs and season with salt and pepper. Mix the potatoes and eggs and together well, so all the potatoes are coated with egg.
Step 4:
Heat
1 tbsp oil in the pan. Pour in the potato-egg mixture and press flat.
Cover the pan and cook over low heat for about 15 mins.
Step 5:
Once the egg is mostly solid when you juggle the pan, you can flip the tortilla.
With one hand, place the flat lid firmly on top of pan. With your
dominant hand, grasp the pan handle, turn the pan over, and remove so
that the tortilla rest on the lid.
Step 6:
Place
the pan back on the hop. Using a spatula, slide the tortilla back into
the pan, so that the browned side up. Cook for another 4-5 minutes.
Remove from heat and slice. Serve hot or at room temperature.
