Roasted Brussel Sprout and Millet Casserole

Ingredients

  • 1/2 lb brussel sprouts
  • 1/2 tablespoon olive oil
  • 1 cup cooked millet
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 tablespoons whole wheat flour
  • 3/4 cup milk, I prefer whole but others would work.
  • 1/4 teaspoon salt
  • 1/2 teaspoon thyme
  • 1 cup shredded cheddar cheese

Instructions

      Preheat oven to 400˚.

Halve or quarter brussel spouts, tos with 1/2 tablespoon of olive oil, and roast until tender and lightly brown, 20-30 minutes.
Once brussels sprouts are almost ready, melt butter over medium heat. Add minced garlic and cook for one minute, whisk in flour and cook for one more minute.
